Zombie Eyeballs
These scary edible eyeballs make a dramatic impression. They are made from bowl-shaped longan, an Asian fruit that is similar to lychee and can be found in the international isle of a large grocery store. As an alternative, you can use lychee or even frozen honeydew melon balls.
Ingredients
- 1 can of longan (or lychee or frozen melon balls)
- Softened cream cheese
- Fresh or frozen blueberries
- 1 zip top freezer bag, quart size
- 1 can of frozen apple-cherry juice, thawed
Directions
Drain the longan in a strainer, making sure to remove most of the liquid. Place the cream cheese inside the bag, move it to one corner and squeeze the air out the bag before sealing it. Cut a small corner off the tip of the bag with the cream cheese. Pipe the cream cheese into the center of the longan, and place a blueberry on each one. Spoon the apple-cherry juice over each eyeball, allowing it to run into the crevices of the fruit. Enjoy the scary result!
